Ingredients
  

Taco Seasoning Mix:
  • 1 tbsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano
Taco Casserole:
  • 1 lb lean ground beef
  • 1 medium yellow onion diced
  • 1 can of RO-TEL original undrained
  • 1/4 cup water
  • 2 cups freshly grated sharp cheddar cheese
  • 3 cups corn chips
Toppings:
  • 1 jalapeno optional - sliced and diced to taste
  • 1 cup shredded lettuce
  • 8 cherry tomatoes halved
  • 2 green onions sliced
  • 2 tbsp diced cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the ingredients for the taco seasoning.
  3. In a large oven-safe skillet over medium heat, cook the ground beef and onions until the beef is browned (about 10 minutes). Remove any excess fat.
  4. Add the taco seasoning mix, water, and RO-TEL to the skillet and sprinkle the cheese on top. Bake for 10 minutes or until the cheese is melted and bubbly.
  5. While the casserole is baking, prepare the toppings.
  6. Once the casserole is done, add the corn chips on top of the melted cheese and garnish with the lettuce, tomatoes, green onions, jalapeno, sour cream, and salsa.
