How is your summer going? I’m loving it! Actually we are on vacation right now. I’m laid back and enjoying the ride, while my hubby is driving us to pick up four of our grandchildren. This is going to be a great week, I’m so ready! We’re going 4-wheeling at the sand dunes, camping, and playing with grandchildren. What can be better than that! The camper is packed with lots of yummy treats and food, we will be eating like kings! That’s one of the things I love about camping is the food! We DO eat good when we’re out playing. My favorite things are the salad’s and today I’m sharing a favorite. This Italian Pasta Salad is great with just about anything, a hamburger, a sandwich, or a steak, it the perfect side dish.
Ingredients
- 1 lb. Shell Pasta
- 5 oz. mini pepperoni
- 1 avocado
- 8 oz. grated cheddar cheese
- 1 pint grape or cherry tomatoes
- ½ cup sliced green olives
- ¾ teas.salt
- 1 teas. lemon pepper
- 1 cup Italian Dressing
Instructions
- Cook pasta to al dente. Drain and set aside to cool. Cut tomatoes in half, cut avocado in squares, add all ingredients into a large serving bowl, add pasta and mix. Then add ¾ cup of Italian dressing and toss. Let set in refrigerator for about an hour, then before serving add the rest of the dressing. Remember salt and pepper may vary according to taste.
