Country Style Macaroni Salad Recipe

We’ve had a few warm and sunny days here in Maine over the last couple of weeks, and I’ve been on a summer salad kick. First I made my Macaroni & Shrimp Salad to go with hot dogs on the grill, then I made Creole Potato Salad go with ribs and chicken tenders on the grill, and last night I made a Country Style Macaroni Salad to go with my Spicy Brown Sugar Chicken Tenders. Summer eating has been in full swing in this household!

John has a weakness for Macaroni Salad, but he usually just wants to buy a print of it from the deli at our local grocery store. I’m not a fan of the Macaroni Salad from there, as it’s been sitting out all day, and I feel like they use way too much dressing on it, and load it up with unnecessary ingredients. When he requested Macaroni Salad last night, I told him I’d rather make it myself at home this time.

This Country Style Macaroni Salad came out good. We had my sister and her boyfriend over for dinner, and they both enjoyed it, as did John and I. The fresh vegetables added a nice colorful crunch, and it was the perfect compliment to my Spicy Brown Sugar Chicken Tenders.

Country Style Macaroni Salad Recipe

Ingredients

  • 2 cups elbow macaroni
  • 1 cup diced yellow bell pepper
  • 1 cup diced celery
  • 1 cup carrot shreds
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 tbsp. white vinegar
  • 2 tsp. yellow mustard
  • 2 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  • Cook macaroni according to package directions; rinse under cool water and drain.
  • Add bell pepper, celery, and carrot shreds to macaroni.
  • Combine mayonnaise, sour cream, vinegar, mustard, sugar, salt, and pepper in a separate bowl.
  • Pour dressing over salad and mix thoroughly.
  • Chill before serving.
