Slow Cooker Herb Crusted Prime Rib

It may seem a little early to be thinking about holiday meals but this year I decided that I want to make our meals but without stressing myself out so much that I’m feeling like a turkey instead of making one. We usually order but there is something beautiful about your whole family sitting around a table to enjoy a meal that you made yourself so I decided I’m cooking for a crowd for the first time this year. Speaking of turkeys though, I haven’t decided if I’m doing a turkey this year or not. Honestly, I’m not in the bird herd and am not a huge turkey fan even though it’s of course traditional. A delicious alternative that is even offered by some places who cater the holidays is prime rib and y’all I am so down with prime rib.

For years, I would see prime rib on a menu, a little pricier than most of the other cuts of meat and wonder “What’s the big deal?” Well, one evening I snuck a bite off of my friend’s plate and holy moly, where had this tender delicious goodness been all my life?! I made him trade plates with me. As I mentioned prime rib is a more expensive cut of meat at around $10 per serving per person, but it is buttery tender and full of flavor (because it’s so fatty) so for a holiday or special occasion it is totally worth it.

Here’s the deal though: I have only eaten prime rib and not cooked it. I didn’t want to have to whip out the frozen pizzas because I ruined the holiday dinner so I had a bit of a dress rehearsal for prime time with my prime rib. Oh did I mention I was going to cook it in the slow cooker?

I didn’t want to ruin a $40 cut of meat, but with the Hamilton Beach Set It and Forget It slow cooker, I didn’t have to worry. It has a smart meat thermometer that you can use to program the slow cooker to cook to your exact specified temperature and then shut off. How awesome is that right?! No guess work to over or under cook the beautiful prime rib. I set it for 145 and it was perfect. Juicy, beautiful caramelization of the outside and herbs, and fork tender. I am loving this Set It And Forget It. You can choose to cook to a certain temperature or a certain time, has a gasket sealed clip on lid, and clip on spoon. It short this slow cooker rocks! Slow Cooker Herb Crusted Prime Rib

Ingredients

  • 3 lb prime rib roast
  • ½ cup olive oil plus 1 tablespoon
  • 5 cloves chopped garlic
  • 1 tbs dried parsley
  • 1 tsp dried oregano
  • ¼ tsp dried thyme
  • 2 tsp ground mustard
  • 1 tsp liquid smoke
  • 1 tsp Worsteshire

Instructions

  • Combine all ingredients except roast and 1 tablespoon olive oil in food processor and pulse a few times to form a paste.
  • Add the 1 tablespoon olive oil to a large skillet.
  • When olive oil is hot, add roast and brown on both sides. Approximately 8 minutes.
  • Place browned roast on a plate or cutting board and rub herb paste all over roast.
  • Place roast in a slow cooker and cook on low for 6 hours or until meat thermometer gets an internal reading of 145.
  • Place meat on plate or cutting board and let rest 10 minutes before slicing and serving.
