WANT TO SAVE THIS RECIPE?

This simple yet satisfying bacon and potato bake is a family favorite in my home. It brings me right back to my days growing up on the farm, when we’d gather ’round the kitchen table for hearty, home-cooked meals made with fresh garden produce.

Thinly sliced potatoes roasted up with savory bacon is classic comfort food at its finest. I love assembling this dish right on a sheet pan – it makes for easy clean-up! The potatoes turn out crispy and golden brown, while the bacon gets perfectly crispy.

A sprinkling of fresh chives or parsley adds brightness, but the beauty of this recipe is that it lets the natural flavors of the potatoes and bacon shine. Serve it alongside a fresh salad or steamed veggies for a well-rounded meal. But be sure to make extra – these irresistible potatoes have a tendency to disappear quickly!

This down-home bake is simple to throw together any night of the week. One bite will transport you right back to grandma’s farmhouse. I hope this wholesome recipe brings your family together for many cheerful meals.

  • 4 medium russet potatoes scrubbed and thinly sliced (about 1/8-inch thick)

  • Remove pan from the oven. Let cool for 5 minutes before garnishing with chopped chives or parsley. Serve warm.

Notes

For extra flavor, try using melted butter instead of olive oil. You can also add sliced onions or bell peppers. For more richness, sprinkle shredded cheese over the top during the last 5 minutes of baking.
