Super simple, fresh salsa – low in calories, but big on flavor!

Ingredients

  • 5 large FRESH tomatoes, roughly chopped with seeds removed
  • 1 jalapeño roughly chopped with seeds removed
  • 1/2 sweet onion roughly chopped
  • 3 cloves of garlic peeled, crushed, and roughly chopped
  • 2 tbsp. cilantro
  • juice of half a lime
  • 1 tsp. red wine vinegar

Instructions

  • Put all of the ingredients in your food processor and pulse until salsa reaches desired consistency. (This only takes a few pulses!)
  • Season with salt and pepper, to taste, and enjoy!

Notes

Weight Watchers Points+: 0 • Makes 3 cups of salsa with a serving size of 1/4 a cup • Freezes well in freezer safe container with about 1/2-1 inch of head room! Consider freezing in 3 individual 1 cup-sized containers and then transfer to a large freezer bag once frozen. Each block of salsa will thaw to create 4 servings! • In terms of chips, I recommend serving with Tostitos Baked Scoops – they’re super natural with only a handful of ingredients, have a fantastic, crisp crunch, and are perfect for scooping the salsa up!
